Cinnamon-Cardamom Energy Bites

Cinnamon-Cardamom Energy Bites

Ingredients

  1. Add the peanut butter, oats, seed mix, protein powder, and honey to a food processor or blender and pulse on and off for 20-30 seconds or 20 ish times until the ingredients are thoroughly combined but the texture is still a bit chunky. Depending on the consistency of your peanut butter, the mixture will either need more or less time. Scoop the mixture out of the food processor or blender and into a medium size mixing bowl.
  2. On a small plate, mix the cacao powder, cinnamon, and cardamom together with a fork.
  3. Set up a work station with a large plate or prepare a large airtight storage container with a lid to place the finished bites in which will also serve as your storage container for the bites.
  4. With a clean pair of hands, roll 18-20 balls (about the size of a ping-pong ball or smaller) and place the bites in an airtight container with a lid. Optionally, you can freeze them for 20-30 minutes to let them set up (hard) depending on the consistency you prefer or refrigerate them for 20-30 minutes to let them set up (softer). Enjoy!
  5. These energy bites will keep in the refrigerator for 7-10 days or the freezer for 2-3 months.
