Freezer-Prep: Tropical Green Smoothie

As moms and nutritionists, we can confidently say, it doesn’t get any easier than this! It’s called Freezer-Prep and it’s like meal prep but for your smoothies!

One smoothie contains ~60% of your daily iodine needs for a healthy pregnancy and ~88% for non-pregnant adults. We need iodine to make thyroid hormones, which are important for metabolism.

Freezer-Prep: Tropical Green Smoothie

Yield: 1 (12 oz) Smoothie

Instructions

  1. Multiply the recipe to the desired amount of servings you want to prep and freeze.
  2. Set out # of freezer-safe 12 oz. glass jars with lids, reusable silicone bags, or zip top plastic bags. Divide all of the ingredients except for the milk and coconut flakes into each smoothie container and seal tightly. Store in the freezer until ready to blend. Frozen smoothie contents will last ~2 months in the freezer.
  3. Add the frozen contents of one jar or bag to the blender (run the jar or bag under warm water to loosen the contents if they're frozen inside the container). Pour 1 1/2 cups cow's milk to the blender and cover, and blend until smooth, about 45-60 seconds. Add more liquid if needed for desired consistency.
  4. Pour back into the original 12 oz glass jar or another drinking glass. Top with toasted coconut flakes (optional) and enjoy!

Notes

Freeze the coconut milk and Greek yogurt in ice cube trays ahead of time to avoid any of the smoothie contents freezing to the side of the jars/bags.
